BUCKWHEAT PORRIDGE (SERVE 2)
1 cup Buckwheat Kennel (Hulled Buckwheat)
2 cups Water
1 cup Almond Milk
1 tbs Raw Honey
Pinch of Nutmeg (optional)
Pinch of Cinnamon (optional)
Place buckwheat kennel and water in a pot and bring to boil.
As soon as the water starts boiling turn it down to low medium heat and cover the pot with lid. Let it simmer for 15 minutes (or until the water evaporated).
Now turn off the heat, let it sit for another 10 minutes.
The cooked buckwheat should be squishy, not watery or mushy.
Divide the porridge into bowls and serve with almond milk, honey, fresh fruit, nutmeg and cinnamon.
