RECIPE No. 1
BEETROOT CACAO MUFFIN (Makes 8) PREPARATION BASICS:
1 small Beetroot, peeled and dice
1/2 medium size Avocado (optional)
1/4 cup Coconut Flour
1/4 cup Cacao Powder
1/4 cup Raw Honey
1/4 cup Coconut Oil (melt)
1 tbs Chia Meal (mixed with 60ml water, leave to gel for 15 mins)
1 tsp Vanilla Extract
1/2 tsp Bi Card Soda
1/2 tsp Cinnamon
Pinch of Himalayan Salt
Preheat oven at 160c degree.
Grease muffin tray with Coconut Oil or line with paper case.
Place all the above ingredients in the food processor, blend it till smooth.
Pour mixture into muffin tray.
Bake for 40-45 mins.
Serve with yoghurt or coconut ice cream.
