RECIPE No. 1
BUCKWHEAT PANCAKE (Makes 2-3)
1 cup buckwheat flour
2 tbs coconut flour (optional)
1 large free range egg
3/4 cup milk (your choice of milk)
1 tbs baking powder
1 tbs coconut oil for cooking DIRECTIONS:
In a medium bowl, whisk egg and milk together, then add all the dry ingredient. Whisk until smooth.
The batter should be thick but pourable, feel free to add a touch more liquid or flour for your desired consistency.
Heat a teaspoon of coconut oil in a non stick pan (medium heat), just enough to cover the case.
Add the batter to desired size and cook 1-2 minutes (or until bubbles appears) then flip to the other side for another 2-3 minutes.
Serve with fresh fruit, honey and yogurt :)
